DAY 36: Smoked Curry Chicken Sandwiches (with leftover chicken from Day 33)

On day 36, we used some of the chicken that we grilled on day 33 in our Grapevine & Oak blend for grills to make delicious Smoked Curry Chicken Sandwiches for lunch.

Making them was easy since the chicken was already ready.  Here's how to do it:

  • Shred some of the chicken thigh meat and warm it up.
  • Toast your sandwich bread in the toaster (or thinly coat the bread with mayo and then warm them up on a griddle)
  • Once the shredded chicken and bread/rolls are ready, compile the sandwich, adding tomato, spinach or lettuce, and mustard, mayo and pesto sauce.

Chef's Tip:  Adding pesto to this sandwich gives the sandwich a nice flash of fresh flavor just before the curry kicks in.  Delicious!

We served the sandwich with a light tomato and cucumber salad.
