On day 36, we used some of the chicken that we grilled on day 33 in our Grapevine & Oak blend for grills to make delicious Smoked Curry Chicken Sandwiches for lunch. Here's how to make them:
- Shred some of the chicken thigh meat and warm it up.
- Toast your sandwich bread in the toaster (or thinly coat the bread with mayo and then warm them up on a griddle)
- Once the shredded chicken and bread/rolls are ready, compile the sandwich, adding tomato, spinach or lettuce, and mustard, mayo and pesto sauce.
Chef's Tip: Adding pesto to this sandwich gives the sandwich a nice flash of fresh flavor just before the curry kicks in. Delicious!
We served the sandwich with a light tomato and cucumber salad.
