DAY 41: Canapes (with leftover tilapia from day 34, brie from day 40, and ribeye from day 37)

On Day 28, we were having another game night and finger food sounded like a perfect dinner to enjoy while we played, so Jac made more of his amazing canapes using leftover tilapia, brie and ribeye from the previous week or so.

If you aren't familiar with the term "canapés", they refer to small, bite-sized appetizers consisting of a base (like a cracker, toast, or puff pastry) topped with various ingredients, such as spreads, cheeses, meats, vegetables, or seafood. They are typically served at parties or events, but we make them all the time for just us!  We love how versatile they are, allowing for endless flavor combinations, usually using a bunch of leftovers that we have on hand!

We made the following five different canapes, just using the leftovers we had on hand:

  • Canape 1: toasted crouton, horseradish, smoked ribeye, tomato, capers, cilantro
  • Canape 2: toasted crouton, smoked chicken, pesto, teriyaki glaze
  • Canape 3: toasted crouton, Mediterranean sardines, cheddar cheese, mayonnaise, olive oil
  • Canape 4: toasted crouton, tilapia, dijon mustard, blue cheese, cilantro
  • Canape 5: toasted crouton, Chinese sausage, wasabi, smoked brie, tomato

Among other things, these canapes used several leftovers from previous grilling/smoking sessions:

Chef's Tip: Canapes can be made with all likes of different bases (ie: bread, cracker, toast, puff pastry...)  Here's some tips for when you are using a bread base:

  • Lightly toast the bread to add texture and prevent it from becoming soggy.
  • For an extra flavor boost, brush the slices with olive oil or melted butter and sprinkle with a pinch of garlic powder or herbs before toasting. This creates a sturdy, flavorful base that enhances every bite!
