DAY 45: Korean Ricecake Soup (with leftover pork from Day 44)

It was cold and raining outside and we were in the mood for soup, so on day 45, we had Korean Ricecake Soup with leftover pork from yesterday.

This soup is very flexible and can use the vegetables and proteins that you have on had.  For ours, we used the following ingredients to put in the broth: poached shrimp, Korean ricecake noodles, pork (grilled yesterday in our Grapevine & Oak blend), white button mushrooms, shiitake mushrooms, red onions, tomatoes, green cabbage, red cabbage, carrot, and celery. That's just we had on hand.  Experiment what that you have and you might find a new favorite meal!

You will also need a broth. We used our favorite pho-based broth.

To be honest, this soup takes quite a while to prepare (since there's LOTS of ingredients that need to be chopped and prepped).  But wow is it delicious, and perfect for a cold, rainy day!
